Our Minis are made with our mild sourdough leaven without added yeast. We have developed our own baking ferment; one based on wholegrain rice and one based on buckwheat. We make our leaven from this baking ferment fresh every week to ensure optimal leavening. A small amount of leaven is added to the starter dough, which works hard for 12-15 hours unlocking the nutrients in the grain. The next day, the main dough is made from this starter dough and, once formed into bread, it is left to rest for another 1-2 hours, before the 'baker's sun', the oven, bakes it into delicious bread.
This range of Minis has been heat-sterilized in special foil in the oven to make it last a bit longer (without preservatives). You do not need to freeze it – this is also the perfect travel bread! Unopened the ‘best before’ date is 12 days from production; this means that this bread tastes best for up to 12 days.
This range of Minis is freshly baked to order. Ideally you consume it as it arrives or you freeze it on arrival. Delivery with DPD takes 2-3 days . In summer we add a 'best before' of 4 days and in winter 5 days from production.
